Winemaking

After harvesting, we carry out a pre-fermentation cold maceration below 6 °C, followed by pressing, selecting only the highest-quality free-run must. Once clarified, fermentation takes place at low temperature, below 14 °C, enhancing both aromatic and flavour balance and intensifying the varietal character. The wine is then aged on its fine lees for 4–5 months using the bâtonnage technique, which provides its distinctive creamy texture and remarkable volume on the palate. An elegant, expressive and lingering wine. A Verdejo for those who truly know Verdejo.

Tasting notes

  • Appearance: Clean and bright straw yellow with greenish reflections.
  • Nose: Defined by great aromatic complexity and elegance. High intensity with aromas of fresh fruit (apricot and flat peach), citrus notes (lime and grapefruit) that bring freshness,, complex herbal aromas of fennel and fig leaf, floral notes (white blossom), an aniseed finish and a subtle mineral hint — a true reflection of the stony soils of our estate.
  • Palate: Outstanding structure and balance. Unctuous, complex and intense. Smooth, complex and intense, with lingering notes of white flowers, aniseed and fresh herbs.

Food pairing

Excellent with carpaccios, warm seafood dishes and smoked salads, as well as white meat stews.
