Verdejo 65% and Viura 35% from the Vinos Sanz vineyards located in the sunniest vineyards of La Seca are blended to create a frank and elegant white wine.

Elaboration
After the harvest, we press and select the highest quality free-run juice and subject it to a long and very controlled racking process to obtain the clean must.
Subsequently, this clean must is fermented in stainless steel tanks at low temperatures below 13°C, thus obtaining a great aromatic intensity and maintaining its varietal character.
Tasting note
- View: Straw yellow with greenish iridescence, clean and bright.
- Nose: A classic within the Denomination. Aromas of ripe tree fruit (peach, pear conference), with herbal nuances (fresh hay).
- Palate: Good volume. Kind, lively and persistent. Very fresh due to the perfect union of Viura and Verdejo, reflecting the aromas of these varieties in the aftertaste. A Rueda of the usual ones.

Elaboration
After the harvest. we carry out a cold pre-fermentative maceration at less than 7ºC and pressed, selecting the highest quality yolk must. This grape must is subjected to a long and very controlled settling process to keep it clean and thus maintain the varietal aromatic compounds. It is then fermented at a low temperature of below 13°C, thus obtaining a high aromatic intensity and a marked varietal and fruity character on the palate. A "textbook" Verdejo, a faithful reflection of respect for the original characteristics of the variety.
Tasting note
- Appearance: Straw yellow with greenish iridescence, clean and bright.
- Nose: High aromatic intensity. It is characterized by its subtlety and elegance, with aromas of green apple and citrus, such as grapefruit, along with tones of freshly cut grass.
- Palate: Fresh, with good structure and sweetness. It presents hints of fresh fruit and fennel with aniseed nuances together with the bitterness that should characterize this variety and that makes it so unique and inimitable.

The wine is aged on its lees for 4-5 months using the Batonage technique, which allows us to obtain its well-known fatty sensation and its characteristic volume in the mouth. An elegant, expressive and long wine. The Verdejo of those who know about Verdejos.

- Nose: Its great aromatic complexity and elegance define it. - Nose: Pronounced varietal character, very exuberant and elegant. It presents tropical aromas (mango and passion fruit), citrus, aromatic herbs and spicy tones (black pepper and chili pepper), accompanied by a vegetal character of fig leaf, as well as mineral, originating from the gravelly soil so representative of our estate.
- Palate: explosive intensity, great volume and smoothness. Very long finish with hints of grapefruit peel and herbaceous notes.

Finca La Colina Dressage is a white wine for cellaring, made with Verdejo grapes from our oldest vines, aged on its lees in ovoid concrete tanks, foudres and 500l French oak barrels for 18 months, balancing this aging with time in bottle before release. A perfect combination of three elaborations that reaches excellence with its blending in bottle.

Elaboration
After the harvest, we press and select the highest quality must, which is fermented at a controlled temperature of minus 12°C to increase and maintain the contribution of fruity aromas. Then, by lowering the temperature to 2ºC, fermentation is interrupted, which allows the grape sugars and the carbonic acidity of this process to be maintained, preserving its stability and providing it with great aromatic intensity.
